The 2009 Washington Cabernet Sauvignon comes from the Double Canyon Vineyard and The Benches Vineyard in the Horse Heaven Hills AVA of Washington State. We harvested both vineyards on October 15, and brought the fruit to Hawks View Cellars in a refrigerated trailer at 38F. It was amazing to see the fruit come through our destemmer. The Cabernet berries were like little bee bee’s coming out of the shoot into the fermenters. In the end, we had two of our one-ton stainless steel tanks and a 500-liter puncheon full of fruit. Typically at Hawks View, we use only stainless steel tanks, but we had purchased a new puncheon (double the size of normal barrel) for the Syrah program and thought it would be fun to take the lid off one end and use it as a fermenter first. The final blend is 66% Double Canyon Vineyard and 34% The Benches. After 18 months in barrel, the wines was assembled in tank, settled for one month and bottled with no fining or filtration.
The 2009 Washington Cabernet Sauvignon shows great promise with aromas of crème de cassis, black raspberry, black currant and cedar. In the mouth the wine is rich, with beautiful red berry fruits and a finish that reminds you of the most decadent cashmere!
